Date Nut Roll

Looking for a sweet treat to finish off a dinner or share at baked goodies day? This no-bake recipe is perfect for a quick and no fuss snack--just chill, slice, and serve! Yum!

10 oz.-pkg. chopped pecans

8 oz.-pkg. pitted dates

16 oz. jar marshmallow fluff

13.5 oz box graham cracker crumbs


1. Prepare. Chop up pitted dates and set aside. Spread a thick layer of graham cracker crumbs in a large, rectangle pan or on a clean surface covered in plastic wrap. Set aside.

2. Scoop out marshmallow fluff into large mixing bowl. Add chopped dates and pecans, as well as a small amount of graham cracker crumbs on top and over hands before kneading mixture together (or, fold into marshmallow using flat spatula).
A second pair of hands will literally come in handy with this step.

3. Dust hands again with crumbs before molding marshmallow mixture into a log shape. Roll back and forth in pan or on surface from Step 1 until outside is covered in a good layer of graham cracker, making sure to maintain shape.

4. Set on plate and set covered in fridge 5 minutes or until chilled and firm. Slice and serve!
